Recipe – Dukan – Turkey Dinner

So last Saturday I made a turkey dinner. I love cooking turkeys many times a year. It can be challenging, especially when living overseas. This time there was only one turkey to be found in all of Hangzhou! But we got him 🙂 He was a turkey grown locally, so very lean. Also, I don’t have an oven. I have something akin to a toaster oven. But Everyone knows I love a challenge!

Ingredients:
Turkey
Large pear – chopped in large pieces
Large green apple – chopped in large pieces
Large red onion – chopped in large pieces
6 garlic cloves – chopped in large pieces
Olive oil
Salt & Pepper

First remove the innards stuck in the rear. Here in China, that includes the head! I couldn’t touch it, blech!! So I used wooden spoons and did a forcep delivery.

Then give your turkey a good bath… Inside and out. Place in pan you are going to use.
Stuff the turkey with the pear, apple, onion and garlic. The moistness and tenderness from simply using these 4 ingredients is amazing!

Generously rub olive oil all over your turkey, don’t forget between his legs and under his wings.
Generously douse with salt & pepper.
Put him breast up and in the oven.

Cook 15 minutes for every pound at 350 degrees F.

That’s IT!! Don’t put aluminum foil on his bits, leave him alone! He’ll be perfect!

Self Love Exercises – Part 7

From the Feel Good Tribe:

7. I’ve said it before & I will say it a million more times: write a gratitude list every morning. It really is the best way to start your day. The simple act of sitting down & making a few notes on what you’re happy about builds up so much positive energy that you can’t help but do something amazing with it!

OK, so I started doing this a couple of weeks ago and it is working. Aside from the “postal” incident, I’ve had more positive days. I have also gotten more accomplished in my daily life.

Today’s Gratitude List… posted on my bathroom mirror:

I am grateful that I still have a living parent… MOM ♥ ♥ ♥

I am grateful that I am going home in 22 days!

I am grateful that I have had the opportunity to travel.

I am grateful for all of the people that support me through encouragement!

I am grateful for the friends that I have met through my blog and the amazing cheering squad that I have, of people I’ve never met in person, but feel I really know!

So… that’s today’s list. I wrote it when I first got up this morning. What are you grateful for today???

Great Way To Start the Day!

My breakfast this morning was 2 slices of bacon, 2 tea eggs and a slice of cantelope. What did you have for breakfast this morning? Can you remember?

(I guess eating all those eggs and all that fatty meat isn’t clogging my arteries after all!)

Waist: 45 / 33
Hips: 56 / 42 (LOL, my HIPS are smaller than what my WAIST was!)

Measurements this morning:
Chest: 36
Waist: 29
Hips: 39
Total inches lost from just those 3 areas: 39 INCHES!
Overall inches lost: 61! I’m only 63 inches tall!

From the machine:
Lean Body Mass (bone, muscle, water): 79.4%
Body Fat Mass: 21.6%
BMI: 25.3 which is “overweight”. The BMI people don’t take all factors into consideration, so they can eff off…. I’m perfect, for me 🙂 I’ve got some leftover bits from losing 111 pounds, but I’m definitely not overweight, given I’m wearing a Size 8!!

Dukan – Consolidation Day 86 – Sunday Runday

Sunday was an awesome day… food wise, Dukan wise and exercise wise!

Daily weight: 148 lbs/67.2 kgs
Goal weight: 155 lbs/70.5 kgs

I started my morning early with a half hour of yoga and some housework. Then at 0900 out for a walk/run. It was HOT! Here’s how hot…

Feels like 101F… bring it on!

So I did this route… which the GPS is off a bit… I walked along the little river, across the bridge and back… so just move my route (in your head) down a bit… LOL

And these are the scenes along my walk…

The construction site has taken over 1/2 the Buddhist Temple and torn it down… they moved the Big incense burners across the walking path to the river side.

The construction site hasn’t taken the temple half… yet… I sure hope they don’t!

I could smell a funky smell, like manure, and couldn’t figure out where it was coming from!

This lovely lady was fertilizing the lush greenery along the river walk… Thank you! You make my walk much more beautiful!!!

I then crossed over the river to come back on the other side.

As I crossed over the bridge once more, I got wolf whistled at… LOL. That made me feel good and gave me the energy in the melting heat to finish…

Out of the 1:20 I only ran 35 minutes. It was just too darn hot… but it gave me the chance to slow down and enjoy the scenery!

Food:
Brekkies: 2 tea eggs… good protein fuel to get started!
Snack when back from walk/run: 2 ounces of an amazingly good aged cheddar that crumbles when you bite it… Mmmmmm and some Jerky… thanks, Suzanne for bringing that!
Dinner at 430 p.m. at Surbhi and Andy’s… OH MY GOD!!! My very favorite Indian dish,  Palak Paneer, made just for me! Yummy, authentic Indian food. I am SO grateful for the people I have met on my 4 years of living abroad! I also had a little bit of rice, dal and aloo! Of course this was a celebration meal 😀

When I got home from my 1 hour 20 minute bus ride… standing (now that must have burned some calories) and dancing to my own tune (Rocking out to Rock of Ages soundtrack in the bus… smiling and dancing, sure makes the locals give me a little space) I opened my email to this picture…

Yummy, juicy, delectable Helena… who is almost 5 months! I am SO lucky that I get to be there when these little cutie patooties are born! Can’t wait to make a trip to Boston to cuddle you!

And before bed a pot of 2% Greek Yogurt with Splenda and flax seed meal. Yum!

Dukan – Recipe – Steak Stir Fry

I had some veggies in the fridge that needed to be eaten so I threw this little dinner together!

STEAK STIR FRY (sorry, I live in China, have a teeny kitchen and a wok, stir fry is what it is!)
Serves 2

1 pound steak (500 grams) – cut in chunks, strips, however you like it!
1/2 large onion – chopped
1/2 carrot- sliced thinnish
1/2 red pepper – chopped
Asparagus- chopped
2 Tbs Coconut Oil (see the * from yesterday’s post)
2 tsp Italian seasoning
Salt & Pepper to taste

Prep Time: 5 minutes
Cook Time: 15 minutes

Put 1 Tbs of coconut oil in pan. Put in onions and carrots, sprinkle with Italian seasoning and cook on medium low for 5 minutes. Stir occasionally. Put your steak on top, add the rest of the coconut oil and stir. Put on the lid and simmer for 6 minutes. Stir occasionally. Take lid off and stir fry the red pepper and asparagus in with the rest of it… Stir fry for 3 minutes. Put lid on for 2 minutes. Serve. Enjoy!

Ingredients

Sautee those carrots and onions gently!

Throw that meat in there!

Add in the rest of the veggies!

Winning – Saturday Sayings

How important is it for us to think this way in all aspects of our lives? Getting back up, brushing ourselves off and starting over is the ONLY way to succeed. I was SO fortunate to have the support from family, friends and fellow bloggers on my continuing journey of better health.

I see so many people that aren’t being encouraged, as well. I see it on Facebook pages when someone mentions that they are losing weight, eating well and exercising, their friends tell them to lie down and have a cookie. What kind of support is that? That is your fat, unhappy friends discouraging you from being better than them. Or your skinny, unhappy friends that like that you are the fat friend, it makes them feel better about themselves.

So, my friends, go out there and WIN today! Stick to that program you are on. Get in at least 30 minutes of some type of moving… even if it’s just walking… and WIN.

Dukan – Day 257 & Liebster Award

Tuesday was a PP Day 🙂

Daily Weight Loss: 0.4 lb/0.2 kg
Total Weight Loss: 91.8 lbs/41.71 kgs
**yesterday’s daily weight loss should have been 0.7 lbs, not 1 lb… I must have put transposed the numbers, so if anyone is following that, there has been an adjustment 🙂

Tuesday was May Day… May 1st and it is apparently a public holiday here, so I had the day off… paid. That was nice!

I woke up at 545 a.m. on my day off… UGH! Although I had been sleeping for nearly 8 hours I really, really wanted to see if I could stay asleep… yeah, no. So up I got, jumped in the shower, made a french press carafe of Peet’s Coffee… yum, and laced up my hiking boots with the intention of hiking up the mountain again. Then, while on the bus I decided I wanted to hike around West Lake. The lake is beautiful, it was early morning, shouldn’t be too much foot or bike traffic yet. So I got off the bus and according to my trusty GPS on my iPhone, waited for bus 81. And waited and waited. I finally figured out there was no such thing as Bus 81 😦

So I started walking towards West Lake. I got to a sweet little park and had a couple of tea eggs. I thought I’d need the energy for the 9 mile walk around the lake… while I sat there I got a text from Kira and decided I needed some Soren love, and headed her way, instead!

On the way, I stopped at Pacific Coffee and picked up an iced latte w/skim milk. And took this picture of myself…

I had a fantastic day hanging out with them… ALL DAY! Sat on the couch, cuddled with Soren, pet the cat, chatted with Kira, helped her pack up Soren’s bedroom and watched about 14 episodes (I’m not kidding) of Steven Seagal: Lawman. I actually enjoyed it! Dan brought us iced lattes in the afternoon and then we had Arabic food for dinner…. yum! An all around fun day!

I then walked the 3.41 miles home. That’s 5.48 kms 🙂 Nice walk. Here’s the results…

Nice walk home. The weather has been pretty decent the past few days, temp wise. After I got home I finished reading The Last Lecture and followed up on some emails… chatted with my daughter, Tiffany and off to bed at 10 p.m. I hope everyone is having a good week so far!

3. I’ve been divorced for nearly 19 years… he’s a friend on Facebook. He’s the 2nd husband, who wasn’t a jerk and is still alive, thank God!… LOL. It’s important for people who divorce to put their kids FIRST… I think we mostly did that (there will always be a screw up or three along that path!)

4. I miss living in the Middle East more than I ever could have imagined! Everything about it.

5. I’ve done quite well with removing toxic people from my life and keep them out. It makes for a much cleaner living 🙂
