Dukan – Consolidation Day 80

Daily Weight: 147 lbs
Goal Weight: 155 lbs

Spent the night last night in Shanghai and after dropping off Suz at the airport I headed back by subway to the train station and then the train back to Hangzhou.

My driver, Jerry, picked me up at the train station and took me to the Wet Market to buy meat and veggies… so much cheaper than the grocery store!

I then got home and started packing boxes for my move home in September. I packed two boxes and will ship them on Thursday… September 20th… leaving for U.S. date 🙂

Breakfast: Buffet at the Courtyard Marriott… I had a 3 egg omelet with onions, peppers and mozzarella cheese.
Lunch on the train: Beef jerky and a handful of almonds
Snack: Yogurt with Splenda and cinnamon
Dinner: Stir fried pork with onions and asparagus. Dipped that in Tamari (which is soy sauce without wheat in it) and wasabi… Oh My Was That Good!

Dukan – Day 229

In very late from consult, so quickie update….

Wednesday was a PV Day 🙂

Daily weight loss: 0.7 lb/0.37 kg
Total weight loss: 82.5 lb/37.51 kg

1. The 160’s are very close!
2. Plastic surgery consult went well, full update in morning blog tomorrow 🙂
3. Sneak peek… Doc said I had very little fat to lipo from abdomen… I love him 😀
4. Didn’t get enough calories in today, but did take some food… Need to work on that better!

I’m off to bed, spent a total of 8 hours on high speed trains today!

Dukan Recipe – Vietnamese Pork

Monday was a PV Day 🙂 I posted the dinner I made last night.

Daily weight loss: 0.2 lb/0.1 kg
Total weight loss: 81.6 lb/37.11 kg

This is the dinner I’m enjoying while typing this up!

Recipe: VIETNAMESE PORK
Serves 2 (I boxed my other half up for lunch tomorrow)

Ingredients:
10 oz of lean pork loin, cut into 1/2″ cubes
1 Tbs fresh ginger, I cut mine in little chunks for some bite 🙂
1/2 large onion, cut in chunks
2 Tbs soy sauce
1 Tbs oyster sauce (if you don’t have use 3 Tbs soy sauce)
**To make this Whole30 compliant use Coconut Aminos**
1/2 tsp olive oil
5 garlic cloves, crushed
A few bits of cilantro

In a zip close Baggie put soy sauce, oyster sauce and ginger. Shake bag gently.

Place cubed pork in bag. Zip closed and shake gently. Place in fridge for at least 30 minutes.

Heat a skillet over medium heat. Add olive oil. Add garlic and simmer 3 minutes. Then add onions for 1 minute.

While garlic is simmering, remove pork from fridge. Remove meat from marinade and drain.

Toss meat in with the garlic and onions, turn heat up to medium-high and stir fry for 3-4 minutes, stirring constantly.

Plate, top with cilantro and ENJOY!

Dukan Recipe – Sautéed Veggies with Beef

When I was in Hong Kong last week I found organic coconut oil on sale. I’ve been doing a lot of research on the Paleo diet for while I’m in Consolidation. I have no plans on ever eating wheat again. EVER. So i think Paleo will work well for me. One of the oils you find in Paleo recipes is coconut oil. It is zero carbs, but a bit high in fat. I typically won’t eat something if the fat is more than 9 grams. This coconut oil is 14 grams of fat per Tablespoon.

So, this is technically NOT a Dukan recipe, but it is a good fat, and if you’re using very lean beef, it should be fine. This is definitely Atkins, low carb and Paleo friendly.

Sautéed Veggies with Beef
Serves 1
Prep time: 5 minutes
Cook Time: 14 minutes

Ingredients:
6 oz very lean beef, cut into 1″ chunks
1 Tbs organic coconut oil
1/2 large onion, cut in large chunks
2 tsp soy sauce
**To make this Whole30 compliant use Coconut Aminos**
1/2 tsp fresh ginger, diced
1/2 cup mushrooms, cut in chunks
Handful of fresh spinach leaves

Melt 3/4 Tbs coconut oil over medium high heat and brown the meat. I can’t describe the amazing aroma this created in my small kitchen 🙂

Remove beef and drain… Set aside.

Melt 1/4 Tbs coconut oil over medium heat and sauté the onions and ginger for 2 minutes.

Add the mushrooms and sauté for an additional minute. Add soy sauce. Stirring frequently.

Add the beef back into the pan, stir. Cook 1 more minute.

Add spinach on top…

Give a good stir, cover 1 minute and Serve!

Dukan – Days 219 & 220 – Dukan Recipe Cuban Flank Steak

Monday was a PP day 🙂
Tuesday was a PV day 🙂

Monday:
Daily Weight Loss: 0.4 lb/0.2 kg
Total Weight Loss: 81.2 lb/36.91 kg
Tuesday: No change – same, same

Tuesday food (since I have no recollection of yesterday… LOL, I DO know it was PP)
Breakfast: 2 Tea Eggs
Lunch: Green leafy salad and tin of tuna
Dinner: Cuban Flank Steak… recipe below.

I have to say, this is YUMMY!!! And if you leave out the mushrooms and only add onions, it’s a PP meal.

I got the recipe idea from although I didn’t use flank steak and mine come cut in chunks already, which is how I have to eat them, given I don’t have an oven or a grill.

Serves 1

8 oz. of Top Round, flank steak or in my case Chinese Beef Top – Cubed
Marinade:
Juice of 1 large Lime
1/8 cup of Olive Oil
1 tsp Cumin
1 tsp Italian seasoning
1 tsp garlic powder
1 Tbsp Soy Sauce
**To make this Whole30 compliant use Coconut Aminos**
1/2 tsp favorite hot sauce or chili powder… I used Daddy Mac’s Awesome Sauce (my son-in-law makes this with his home grown habanero peppers!)

With dinner:
1/2 Large onion chopped in chunks
And if a PV day, handful of mushrooms

Prep time: 2 minutes
Put meat in bowl or zip top baggie.
Put the rest of the marinade ingredients in there.

I thought about this marinating in my fridge ALL.DAY.LONG!

Shake, shake, shake and put in the fridge for 8 or more hours.

Cook time 11 minutes
Remove marinated meat from fridge.

When I took the lid off… yum… the smell was incredible!

Put 1 Tbsp Olive Oil in skillet or wok.
Heat to Medium-High.
Put the meat in and cook for 5 minutes.

Turn meat over.
Put the onions in and cook for 3 minutes.

Notice that lime is still in there 🙂

Toss the mushrooms in, if you’re making it a PV dinner, and cook for 3 minutes. I used Enoki mushrooms which are kind of like al dente pasta when cooked… sorta. And they basically have NO CARBS!!!

Plate and Enjoy!

Hello friends and family!

Me & the new baby

Well… where do I begin? I’ve started this blog to share with family and friends my journey of living overseas, dieting and travel.

I started the Atkins Diet 2 days ago. My plan is to upload recent pics and to upload pics monthly, on the 22nd of each month, to show my progress.

As many of you know, I lost 45 pounds last year, with the help of James and Kim in Miami. I cut out bread, pasta, potatoes and rice and started seeing James 2x per week for personal training.

I moved to Abu Dhabi in Nov of 2008 and kept it off until this past summer, when I started adding that bad food back into my diet and wasn’t exercising as much, because it was hot here…. like 122 degrees Fahrenheit hot! So in 5 short months, I gained 18 of those pounds back… now they are coming off and MORE!

I have bought myself a wii and have committed to working out at least 3 times a week on it. My friend Lucy and I have used it for bowling and tennis and boxing (recommend one be in better shape than me to do the boxing… LOL).

Lucy and I will be walking the Camino di Santiago from April 23 to May 27 (or so). This is a 750+ km walk crossing the Pyrenees mountains from France into Spain and then the entire… yes, that’s ENTIRE length of the upper part of Spain. And to finish off this, my first blog, I’ll tell you that after 13 months of interesting work on a ward at this busy hospital I work at, I moved to the delivery unit this week and had my first delivery yesterday afternoon. A little girl, weighing 3365 grams, who came out not only in the caul (the bag of waters), but with a nuchal hand up by her left cheek, held there by her nuchal cord (for those not in the know, that means her hand was against her face and held there by her umbilical cord, this is unusual, to say the least). She was also in a bag of meconium (baby poop) and had a true knot in her cord… oh for the love of midwifery. She did great, mom did great, midwife is happy 😀 Life in Abu Dhabi!

So off I go… need to make a grocery store run… Happy Holidays everyone!
