The Bed’s Done!

Steady progress for the week. The bed is now completed. Joey & I designed it so that the entire middle can be taken out. You can move the mattress, lift the plywood base and then remove the three middle rectangles. This will allow us to bring in larger pieces of furniture or appliances like the fridge.

We also almost have the flooring completed I’m short one box. Oh! And the electrical is done. My bonus child Ashley’s husband Evan came and did all the electrical wiring in about four hours yesterday! And my BIL, Rick, stopped in to give us a hand today. Tiffany and I finished the painting on the lower 2/3 of the bus, too.

BULLET JOURNAL – 1

I was introduced to Bullet Journaling last month by Kristi Ridd-Young the President of the Midwives College of Utah. I have been working on improving my time management and she talked to me about the Bullet Journal and why it works for her.

So I did a lot of research and realized this could be something that works for me. This is the best place to start if you want to learn more about this type of journaling: The Bullet Journal.  The original Bullet Journal is not available in the U.S. right now and is shipping from the U.K. for more $$ than the journal itself, so I did some research and found other companies that sell “dot grid” notebooks and ordered from a really cool company called Cognitive Surplus. They are a science based notebook company with really awesome colors! I bought the Cellular Biology Vintage Softcover for my first journal and the Mathematics Vintage Softcover for my second.

So for tonight I’ve got the front page and my index pages done and I’m off to bed… last night was a late night getting back from Maroon 5 in Miami! 😀 Taking my quick reference guide to bed with me to do a little studying. Recipe – Paleo – Coconut Muffins

I made these with the kids of the family I’m visiting in Australia. They are a large family so we made 6 times this batch for a total of 36 muffins! I’m eating a warm muffin now, as I write this post… Mmmm!

COCONUT MUFFINS
Makes 6 muffins

Ingredients
3 Eggs
2 TBS butter (melted) **learned a neat trick from the kids today… Put your butter in a bowl, then place it in a bowl of hot water and let it melt… Prevents browning!!)
1/3 c sugar (I used organic rapadura)
1/4 tsp salt (I used organic sea salt)
1/4 c coconut flour (not meal! Must be flour)
1/4 tsp baking powder
3 TBS grated coconut

Blend together eggs, butter, sugar and salt.
Combine the coconut flour and baking powder and then whisk into wet ingredients, ensuring no lumps.
Fill muffin tins halfway with the batter.
Sprinkle the grated coconut on top.
Bake at 400F for 15 minutes.
Enjoy!

Recipe – Thanksgiving Meals – Dukan – Paleo – Gluten-Free

I’m going to post some of my favorite Dukan friendly meals that are PERFECT for Thanksgiving and Christmas dinners, over the course of the next few days. My son-in-law said to me the other day that there would be “no dieting” next Thursday, sigh, my family still doesn’t get that I #1 DIDN’T DIET and #2 You don’t have to eat wheat ladened crap to have an amazing meal 😀

So… here’s recipe #1… it’s a simple one. My turkey is the moistest, yummiest turkey I eat. Why? I don’t do much to it.

TURKEY

Serves: A lot of people

Ingredients:
One big turkey
1 large green apple (or red, but the granny smith’s are yummier) chopped
1 large pear, chopped
1 large red or yellow onion, chopped
2 celery stalks, chopped
8-10 garlic cloves, mashed
1/4 c olive or coconut oil
Salt and Pepper

Preheat oven to 325 F

Rinse your turkey.
Stuff turkey with the veggies.
Put him in the pan breast side down.
With your fingers, cover the turkey with oil. Make sure you get in all the nooks and crannies!
Generously salt and pepper.
Stick in the oven 20 minutes for every pound. So if it’s a 10 pound turkey 200 minutes (or 3 hours 20 minutes)
Let set for 30 minutes before carving.
Eat.

Easy peasy! Don’t be covering up the bits with aluminum, don’t be puttin’ that turkey in a bag! Just cook the darn thing… PERFECTION, I’m telling you 😀

Many of the people in my life don’t ring up 411 for information, they ring up me. This has been going on since I was a kid and I love it.

Questions from this past week via text, phone call and Facebook:

Q: “I had to take an unexpected trip to TN, can I vote today”
A: “Nope” Sadly 😦

Q: “Might be a stupid question but if gluten free is it also wheat free?”
A: “Yep” … Which was followed up by an awesome 20 minute phone conversation, as we were both driving.
I’ll add here that there are no stupid questions, just unasked ones. And I’ll answer questions all day about the benefits of healthy eating, so being them on!!

Q: “What do you mean ‘search box under the start button’?”
A: Take a picture of your desktop screen and text it to me so I can better explain.”
Q: “Desktop screen?”

Q: “Been at a birth for 44+ hours, any suggestions for getting baby under the pubic bone?”
A: “Lie her flat on her back, knees to ears”
This one from a seasoned midwife and I feel so blessed she asked, and it worked! Social media has enabled us to support one another from all over the world… Sometimes all we need at a birth is a fresh set of hands 🙂

How To Have An Amazing Day!

Wake up every morning with the idea that something wonderful is possible today. – Smiling is a healing energy.  Always find a reason to smile.  It may not add years to your life but will surely add life to your years.  A consistent positive attitude is the cheapest ‘fountain of youth.’  You’ve got to dance like there’s nobody watching, love like you’ll never be hurt, sing like there’s nobody listening, and live like it’s heaven on Earth.  Read The How of Happiness.

 

I try to live this kind of life. Some days it’s difficult, but the really awesome thing is that you can’t stay sad or mad if you simply smile. I smile at myself in the mirror. I got into this habit a long time ago. Who is the first person you see each day? YOU. So if you smile at yourself first thing in the morning, you’ll have an amazing day! I also answer the phone with enthusiasm and a smile on my face. It can be felt on the other end.

Practice smiling today… it will make your day even more amazing than it already is! And leave me a comment telling me how you make sure that you have an amazing day!
