Australia Wrap Up & a Dukan Update

So, we’ll start out with my wild adventure down under 🙂

I stayed 3 full days after the baby was born. On Saturday I went snorkeling with a group from MeetUp.com. And had an awesome time. Great way to wrap up 4 weeks in Adelaide.

I then rented a car and started out on the Great Ocean Road from Adelaide to Melbourne. It was a long, but lovely 700 mile drive.

Fun things to see…

Then I got to Melbourne and stayed a few nights with Kay. A Scottish midwife I met in Abu Dhabi. We went for a long walk and lunch down by the water…

The second night we met Melissa a Kiwi midwife I met in Abu Dhabi and Jax, a friend of a friend for a Thai fusion dinner…

20130331-180254.jpg

Then it was off to Malua Bay to see Gen, Dean and Gracie. I met this lovely family in Abu Dhabi, as well…

20130331-180648.jpg

We hiked, went to the zoo, BBQd breakfast at the sea, hiked some more, burned a bonfire, FUN!

Then off to Sydney to meet up with Gail. Gail was my trainer in Abu Dhabi and my neighbor. And she is one of the funniest people I know. She invited me up for “tea” one night and so I ate dinner and went up to her flat only to find that “tea” is dinner. She’s called me Dickie since then… I’m sure it’s derogatory, but she says it with sarcasm and love at the same time 😀

20130331-181812.jpg

We drove from Sydney to The Sunshine Coast, north of Brisbane, in 16 hours… Long ass day, but wonderful company! She lives about 30 minutes from Steve Irwin’s Australia Zoo!! We went with Gail’s daughter Olivia and her wee little man, Angus. What a fun day!

And after cuddles and see ya laters, it was time for my 6 week Australia Adventure to come to a close. I flew out of Brisbane with ZZ Top, no kidding. On my second favorite plane…

20130331-183221.jpg

And, no, I didn’t get pics of ZZ Top, I try to think how I’d feel if people were interrupting me for pics.

And now I’m home a week. It’s Easter. I had a lovely day with my mom and Tiff, Joey and ALL the grandkids at church and then a wonderful dinner at Jenni and Chris’ house.

Now my update. I’ve gained 18 pounds since I’ve come back to the States in September. 9 of them in Australia. The first 9 creeped up. I’m freaked out. My clothes still fit, but are snug. I noticed my undies were snug last week and couldn’t imagine what was up. Then I got on the scale. I have stayed gluten free. In Australia I logged more miles on my RunKeeper app than any other 6 weeks in the past year. I hiked almost every single day! i swam and snorkeled. I climbed a freaking mountain!!!

I’ve done a few things that I need to rein in… 1. Too much full fat cheese. 2. Replacement foods (in Australia I splurged on GF pretzels, muffins, crackers… One night I ate GF crackers with organic honey!!!) 3. Wine. I’ve had a couple glasses a week, which is a lot for me. Moscato… Damn you, Cathy Cook! LOL

So, starting tomorrow, I’m doing 4 days of attack and then alternating PP (Pure Protein) and PV (Protein Veggie) days until it’s off. And I’m going to blog EVERY.SINGLE.DAY… To hold myself accountable and to get the support I need from all of you.

So, I’m back… Daily posts. Looking forward to getting back on track!

Ciao!

Recipe – Thanksgiving Meals – Dukan – Paleo – Gluten-Free

I’m going to post some of my favorite Dukan friendly meals that are PERFECT for Thanksgiving and Christmas dinners, over the course of the next few days. My son-in-law said to me the other day that there would be “no dieting” next Thursday, sigh, my family still doesn’t get that I #1 DIDN’T DIET and #2 You don’t have to eat wheat ladened crap to have an amazing meal 😀

So… here’s recipe #1… it’s a simple one. My turkey is the moistest, yummiest turkey I eat. Why? I don’t do much to it.

TURKEY

Serves: A lot of people

Ingredients:
One big turkey
1 large green apple (or red, but the granny smith’s are yummier) chopped
1 large pear, chopped
1 large red or yellow onion, chopped
2 celery stalks, chopped
8-10 garlic cloves, mashed
1/4 c olive or coconut oil
Salt and Pepper

Preheat oven to 325 F

Rinse your turkey.
Stuff turkey with the veggies.
Put him in the pan breast side down.
With your fingers, cover the turkey with oil. Make sure you get in all the nooks and crannies!
Generously salt and pepper.
Stick in the oven 20 minutes for every pound. So if it’s a 10 pound turkey 200 minutes (or 3 hours 20 minutes)
Let set for 30 minutes before carving.
Eat.

Easy peasy! Don’t be covering up the bits with aluminum, don’t be puttin’ that turkey in a bag! Just cook the darn thing… PERFECTION, I’m telling you 😀

How to cook a perfect turkey

Mmmmm!

Here’s a link from last year’s Thanksgiving dinner, where I had the pleasure of introducing my Turkey Day culture to a family in Hangzhou.

Dukan – Consolidation Day 93

I can’t believe how long I’ve already been in Consolidation! Day 93 of 500. Nearly a fifth of the way to Stabilization!

Today’s weight: 148 lb/67.1 kg
Goal weight: 155 lb/70.5 kg

I’m working in Guangzhou for 2 weeks and have the pleasure of having my friend Aisha who lives in Saudi Arabia here as a student midwife. It is so exciting! Yesterday we worked on blood drawing and placing IVs (I volunteered to let her practice on me, as did her husband) and today physical exams and other fun stuff. She’s also working with one of our doctors here.

I ran 5k the night before I came to Guangzhou and I’ve been speed walking 5k an evening here. Hoping to run in the morning. I’ve been having some insomnia this week, for some reason 😦

I’ve also been doing a 10 minute morning yoga routine with YOGAmazing on my iPad every morning and a 25-45 minute routine of my own nearly every evening.

And lastly… I just want to say that I think it’s awesome that food like this is on my diet. No magic pills, no artificial hormones and starvation, just damn good food 🙂

Breakfast: Bacon, red onions, garlic, shaved, organic Parmesan, green apple slices

20120812-213706.jpg

Breakfast: Pork belly chunks, red onion, cilantro, curry, fried egg with mozzarella

20120812-213748.jpg

Dinner: Beef steak chunks, red onions, red cabbage salad with cucumbers

20120812-214041.jpg

Yum, yum, yum!

Ciao 😀
