I’ve had a lot of requests for recipe ideas lately. Tonight I made a beef steak curry stir-fry. I make really quick & easy meals because I’m limited on what I can do in my little Chinese kitchen.
BEEF STEAK CURRY STIR-FRY
Serves: 2
Prep Time: 5 minutes
Cook Time: 10 minutes
Ingredients:
2 Tbs. Coconut Oil*
5 cloves garlic, smashed, chopped, diced, however you like it
1 large red onion, chopped (I like mine chunky)
Ginger, about the size of your thumb, chopped or diced
16 oz (550 grams) beef steak, cut into 1″ pieces
2 Tbs. curry powder, more if you like!
1/4 tsp Cumin
Salt and Pepper to taste
Place coconut oil in wok or frying pan on medium and toss in onion. Put 1 Tbs. of curry and the cumin on the onions and stir for 1 minute. Add the meat and stir for 30 seconds then add the rest of the curry, stir and turn down to med-low for 5 minutes, cover. Then add the garlic and ginger. Stir every once in a while for 3-4 more minutes.
Serve.
See… easy peasy 🙂
*Coconut oil is NOT part of the Dukan Diet. No oils are. However, I used olive oil and coconut oil nearly daily throughout my 10 month weight loss journey and still lost 111 pounds. It is up to you whether or not you want to use it. In 1 Tbs. of coconut oil you will find: 0 Protein, 0 Carbohydrates, 13.5 mg Fat… worth it, in my humble opinion! As with anything, use in moderation.
Enjoy!

Mmmm! I would make that without the curry! 🙂
You could totally throw anything in there and it would come out good 🙂
Copied and ingred. are on my shopping list. Will have next week. You make cooking interesting. We will have lots of good meals to cook when you get here.
We’ll have some yummy meals when I get home, Mom!
You should write a cookbook!!!!!
If I could take decent photos, I would 🙂
Oh, my thank, you thank you. Will work with diet restrictions. This time around I am remembering
that you said about oil. I am hoping that will help my tummy. You are a beautiful woman and good friend.
Yes, Kath, the coconut oil will definitely keep your tummy happy!

Any time. Trying to uncover some fun parts you don’t get to see on TV…
That’s what makes reading your posts so exciting 🙂

I will try this. One of the greatest joys of being home is in cooking my own food. Tonight, baked salmon, steamed asparagus, & a simple salad. Joy! Plenty left over for work lunch tomorrow.
I am so proud of you for continuing with your diet and exercise.
I wish I could get fresh salmon here! Yummy!!! Enjoy 🙂
One of the many joys of being home!
My life is massively HECTIC!! So no blog update from me at the mo – marathon training going well – diet going OK – not perfect but not really bad. New job has been incredibly over-whelming but I am enjoying it – sucker for punishment 😉 I LOVE your recipes…. I’ve replicated loads of them – THANK YOU.
PS. YOU LOOK AMAZING!
Oh Mel!!! Thanks for the update! Miss your posts, glad to know you got moved and already started your new job! How’s Millie taking the move? Glad you are enjoying the recipes and thanks for the compliment 🙂 I am LOVING running and thank you for inspiring me!!!
This looks scrumptious and so do you on your new header! 🙂 Look at you, standing so confidently – shazam!
MJ
Thanks, MJ! I thought it was about time to change the header. I feel fabulous and I think it shows in everything I do these days 🙂
Great point on the healthy oils. Weight Watchers says to have 2 tbs of healthy oils a day. You have to keep those joints lubed…
The coconut oil is amazing! I also discovered macadamia oil… Mmmm!
